Raw ham is a seasoned product, one of the main of the Italian delicatessen, made from selected pork legs, from animals between 160 and 180 kg in weight. The typical shape of this salami resembles an elongated pear, inside the meat has a more or less pink color and is edged with fat; the fragrant perfume, the delicate and aromatic taste make it one of the most popular cured meats in the world.
The processing of raw ham requires three ingredients only: pork legs, salt and time. The thighs (between 9.5 and 14 kg in weight) are massaged with salt, left to rest briefly and then washed, brushed and dried at a temperature not exceeding 15 ° C. Then follows the seasoning phase, which lasts from 8 to 24 months, in controlled environments, where the hams are hung on special frames. During this phase the sugnatura takes place, that is the muscular parts of the thighs are covered by a mixture, composed of pork fat, salt, pepper and other ingredients which vary from place to place; this mixture prevents the ham from drying too quickly. Seasoning methodology and exposure to currents
